Rob’s Valentines Day Treats

In preparation for Valentines Day, Development Chef Rob has shared the love with us, by sharing his special recipe for these delicious heart-shaped sandwich cookies!
Here’s what you’ll need:
For the cookies:
- 250g unsalted butter
- 350g caster sugar
- 2 medium-sized eggs
- Zest of 2 lemons
- Pinch of salt
- 600g plain flour
- 1 tsp baking powder
- Red food colouring gel
For the filling:
- 200g unsalted butter
- 400g icing sugar
- Red food colouring gel
- Juice of 1 lemon
Instructions:
- Preheat your oven to 180˚C and line 2 baking sheets with greaseproof paper (or use non-stick baking sheets).
- Combine the butter and sugar in a mixing bowl, whisking until light and fluffy. Then beat in the egg and lemon zest.
- Sift the flour and baking powder into the bowl, add a pinch of salt, and whisk slowly until fully combined.
- Evenly divide the mixture into 2 bowls. Add a few drops of red food colouring to one of the bowls, and mix to reach your desired shade of pink. Leave the other bowl plain.
- Roll out the dough on a lightly floured surface until it is approx. ½ cm thick. Use 2 different sized heart shaped cookie cutters to cut an equal number of pink and plain hearts.
- Bake the cookies in the oven for 6-8 minutes, until just starting to become golden at the edges.
- While the cookies are baking, whisk the butter for the filling in a bowl, and slowly add the icing sugar until your buttercream has formed. Evenly divide the mixture into 2 bowls, and add a few drops of red food colouring to one of the bowls, and mix to reach your desired shade of pink. Leave the other bowl plain.
- Once the cookies have baked and fully cooled, sandwich the heart-shaped cookies with the buttercream using a piping bag – you want to use the plain buttercream to sandwich the pink cookies, and the pink buttercream to sandwich the plain cookies!
- Decorate however you like, and share with your loved ones!
